Tiki's Tuna Salad
- 2 cans tuna
- 1 snack size box of raisins (would have liked more but only had one left! LOL)
- 1/4 cup chopped celery
- 1/4 cup sliced almonds
- 1 granny smith apple (chopped)
- 2 tbsp. chopped scallions
- 1/3 cup mayonnaise (i use smart balance. it is loaded with omega 3's and non-hydrogenated)
- 1 tbsp. ground flax seed (i put that in about everything)
I ate mine today on whole grain toast, with a little salad of baby spinach, Amish gorgonzola cheese, and some yummy balsamic vinaigrette dressing. I also had a handful of grapes (the last in the bowl).
DEEEE-licious!!!!!!
