A Great Day So Far


Exchanged gifts with TikiWife this morning, watched "Four Christmases" (a gift from Sara), went to lunch at Finn's (Turkey Dinner!), and am now snuggled on the couch in my new Darth Vader sleep shorts watching Season Two of Psych on DVD, snacking on some movie snacks that were in my stocking, and awaiting the sweet embrace of a nap!

Drink Recipe: Tight Snatch

Bacardi just started following me on Twitter. Figured I should post a Bacardi drink recipe pronto! Even though it isn't an original, the Tight Snatch has certainly become a signature of mine.

Tight Snatch
1/2 oz Bacardi® light rum
1/2 oz Malibu® coconut rum
1/2 oz peach schapps
splash of pineapple
splash of cranberry

In a mixing glass half-filled with ice, pour all liquors. Add juices to create a nice tasty looking PINK color. ;-) Can also be built over ice, using a little more juice.

Classic Cocktail: Bourbon Daisy

For @dana88 who wondered what a Bourbon Daisy was.

Last night I made a server a "Sidecar" for her shift drink. Since I used fresh squeezed lemon juice I was left with half a lemon. Not wanting to waste it, I whipped up a Bourbon Daisy. Here is a classic recipe and the one I used last night. Mine is about the same sweetness because of the triple sec.

Bourbon Daisy
2 oz bourbon
1 oz lemon Juice
1/2 tsp grenadine
1/2 tsp Superfine Sugar
Garnish: Orange Slice and Cherry
Shake all but fruit in a cocktail shaker half filled with ice. Strain over ice into an old-fashioned glass. Garnish with fruit.

Tiki's Bourbon Daisy
2 oz bourbon
1/2 oz triple sec
juice of 1/2 lemon
powdered sugar
Rim a DOF glass with powdered sugar. Shake ingredients with ice. Strain into the old-fashioned glass (no ice). Drop in a cherry. Sit outside the Golden Lion listening to the waves and checking twitter on your blackberry. Enjoy.

Mocha Mint

1 oz Irish cream
1 tbsp chocolate syrup
1 tsp creme de menthe
1 tsp creme de cacao
Hot coffee
Combine in your favorite mug. Top with whipped cream, if desired.

Holiday Drink Suggestions!

Just in time for Christmas and New Year's Eve, a list of holiday drink suggestions. I have saved you the hassle of looking around in my blog and recipes page by listing a mess of recipes right here!


Warm Drinks

Hot Chocolate Butternut
1 1/2 oz butterscotch schnapps
1/2 oz amaretto almond liqueur
Hot chocolate
Combine ingredients in a coffee mug. Top with whipped cream, if desired.

Mocha Mint
1 oz Irish cream
1 tbsp chocolate syrup
1 tsp creme de menthe
1 tsp creme de cacao
Hot coffee
Combine in your favorite mug. Top with whipped cream, if desired.

Jen's Creamy Thighs
1 oz amaretto almond liqueur
1 oz Irish cream
hot coffee
whipped cream
Grand Marnier® or Cointreau® orange liqueur, to float
Combine first three ingredients in a coffee mug. Top with whipped cream and float orange liqueur on top.

Hot Buttered Mocha
1 1/2 oz butterscotch schnapps
1 pkg instant hot cocoa
hot coffee
Combine all ingredients in a coffee mug. Top with whipped cream, if desired.

Christmas Cocoa
2 oz Godiva® chocolate liqueur
1 pkg instant hot cocoa
mini marshmallows
Combine Godiva® and mixed hot cocoa in a coffee mug. Top with some mini-marshmallows. Enjoy.


For Christmas

Peppermint Twist
1/2 ounce each:
Peppermint Schnapps
Dark Crème de Cacao
Coffee Liqueur
Combine all ingredients in a shaker half filled with ice. Shake and strain into a cocktail glass or over ice in an old-fashioned glass.

Snowball
1 1/2 oz Irish cream
3/4 oz Level® vodka
1/2 oz RumpleMinze® peppermint schnapps
Shake with ice and strain into a rocks or cocktail glass.

Rudolph
1 1/2 oz rum
Splash of sour mix
Dash of grenadine
Cranberry juice to balance
Combine all ingredients in an ice-filled highball glass. Stir gently. Enjoy!

Holidaze
1 oz gin
½ oz peach schnapps
OJ to balance
Combine all ingredients in an ice-filled highball glass. Stir briskly and serve.

Candy Cane
1 1/2 oz vodka
1/2 oz peppermint schnapps
Mini Candy Cane to Garnish
Pour vodka and schnapps into a shaker with plenty of ice. Shake until the shaker frosts. Strain into a cocktail glass. Hang a mini-candy cane on the inner rim of the glass. It will add color and flavor. Enjoy!

Gingerbread Man Shooter
1/2 oz each:
Smirnoff® vodka
Goldschlager® cinnamon schnapps
butterscotch schnapps
Irish cream
Shake with ice to chill and strain into a large shot or rocks glass. This is one of my favorite holiday drinks!

Caribbean Christmas
1 oz rum
1/2 oz coconut-flavored rum
2 oz pineapple juice
2 oz cranberry juice
Shake well with ice and strain into an iced highball glass. Garnish with tropical fruits.

Red Nose Cocktail
1 1/2 oz light rum
1/2 oz grenadine
1/2 oz fresh lemon juice
cranberry juice
Shake rum, grenadine, and lemon juice with cracked ice and strain into an iced highball glass. Fill with cranberry juice, and a splash of club soda if desired. Garnish with a skewer of cranberries.

Mele Kalikimaka
2 oz gin
1/2 oz triple sec
1/2 oz pineapple juice
Stir with cracked ice ans strain into a chilled cocktail glass. Garnish with a pineapple chunk, a little paper parasol, and ride the trade winds to happy hula-days!!

For New Year's Eve

Bad Habit
1 oz Level® vodka
1 oz peach schnapps
Cranberry juice to balance
Pour all ingredients into an ice-filled highball glass. Stir and serve.

Resolution
1 1/2 oz bourbon whiskey
splash of triple sec
1 oz sour mix
dash of grenadine
Pour ingredients into a shaker half filled with ice. Shake it like a polaroid picture. Strain into a cocktail glass and serve.

Out With A (L'Orange) Bang
1 1/2 oz Grey Goose® L'Orange
Splash of Cointreau®
Orange Juice to balance
Pour all ingredients into and ice filled highball glass. Stir and serve.

Happy Ending
1 1/2 oz Absolut® Mandrin
1 oz cranberry Juice
club soda to balance
Combine over ice, using equal parts juice and soda

TikiTender To Join Management Team At Golden Lion

TikiTender To Join Management Team At Golden Lion

For those that were curious about my "new job" posts on Twitter and Facebook, put your fears to rest. I am not leaving your favorite beachside restaurant.

Effective yesterday (Sunday), I have joined the management team at the Golden Lion. You will still see my smiling face behind the bar on Friday & Saturday nights. For the rest of the week, I will be the Assistant Manager.

I have resisted a move in this direction for a while because I love being behind the bar, but the time was right for the change. This is a great opportunity for me and I look forward to the new challenges. Mahalo nui loa to Tony, Carolyn, and Julio!

My work days will be changing a bit. Generally, I will be off on Wednesday & Thursday now. You can always check my calender "Good Times With TikiTender" to see when I will be working.

Wish me luck. I am excited about this new adventure! Plus I will have more chances to wear Mad Gringo shirts to work!

How To Spot A "Cocktail Digger"

I met up with a few friends for beers last week. To break the ice, I asked: “When a guy buys you a drink, how do you react?”

Apparently, that’s a touchy subject. My guy friends quickly became agitated.

We didn’t discuss the guilt a woman feels for accepting or rejecting drinks. We talked about “cocktail-diggers.”

I’d heard of gold diggers and gravediggers, but never a cocktail-digger. But according to the guys, that’s a woman who glams-up and waits at the bar for a sucker to buy her drinks...

Repeal Day Drink Suggestions


On December 5, 1933 Prohibition in the United States ended. Join the Golden Lion as we celebrate the passing of the 21st Amendment to the U.S. Constitution, giving citizens the right to once again consume beer, liquor, & wine. Even if you can't join me at the Golden Lion's Second Annual Repeal Day Celebration, you can still get into the spirit with these classic cocktails! Since these are classics, there exist many variations. These are the recipes I use.


Classic Martini
2 oz gin
1/4 oz dry vermouth
Fill a cocktail glass with shaved ice and water to chill. Pour ingredients into a shaker or mixing glass half filled with ice. Using a long handled bar spoon and a fast motion, stir 5o times. Dump ice out of glass and strain contents of shaker into prepared glass. Garnish with one or two olives.

Manhattan
2 oz bourbon whiskey
1/2 oz sweet vermouth
Fill a cocktail glass with shaved ice and water to chill. Pour ingredients into a shaker or mixing glass half filled with ice. Using a long handled bar spoon and a fast motion, stir 5o times. Dump ice out of glass and strain contents of shaker into prepared glass. Drop a cherry into the glass.

Sidecar
1 1/2 oz brandy
1/2 oz triple sec
1/2 oz lemon juice
Fill a cocktail glass with shaved ice and water to chill. Pour ingredients into a shaker or mixing glass half filled with ice. Shake vigorously. Dump ice out of glass and strain contents of shaker into prepared glass. Garnish with a lemon twist.

Ward Eight
2 oz blended whiskey
1 tsp grenadine
1 tsp powdered sugar
juice of 1/2 lemon
orange slice
maraschino cherry
Shake first four ingredients with ice. Strain into a highball glass filled with ice. Garnish with orange and cherry.

Presbyterian
1 1/2 oz bourbon whiskey
club soda
ginger-ale
lemon peel
Pour whiskey and equal parts of soda and ginger-ale over ice in a highball glass. Give a quick stir and drop in a lemon peel.

Chicago Cocktail
2 oz brandy
1 tsp triple sec
1 dash bitters
Rim an old-fashioned glass with lemon and dip into powdered sugar. Pour ingredients into a shaker or mixing glass half filled with ice. Stir well and strain contents of shaker into prepared glass.

Drink Recipe: Surfer On Acid

One of my favorite shots to offer when people ask for Jager. It's wicked tasty, plus fun at a beachside bar. Can also be served over ice with some more pineapple juice. Everyone knows I love pineapple juice!

Surfer On Acid


3/4 oz Jagermeister® herbal liqueur
1/2 oz Malibu® coconut rum
1/2 oz pineapple juice

Shake with ice, strain into a rocks glass, and serve as a shot.

Zac Brown Band 11/13/09

November 13, 2009 - St. Augustine Amphitheater

First off, I'm no journalist. I didn't sit in the back of the venue and take notes. These are just my memories of the show while they are still fresh in my mind.

Let's start with the venue,
The St. Augustine Amphitheater. I first discovered this venue last year when I attended the Blackwater Sol Revue, featuring Toots & the Maytals and J.J. Grey & Mofro. I am totally smitten with this venue! Seating about 4,000 fans in mostly covered seating and located only 40 minutes from my house, it is perfect for an "intimate" night of music. Papa Roach, Jackson Browne, and Willie Nelson have played there recently. Upcoming artists include The Moody Blues & Aretha Franklin. Their Winter Wonderland festival will be starting soon, complete with an ice skating rink, sleigh rides, and and ice slide! Check out this venue here: http://staugamp.sjcvenues.com/

The Music:

Levi Lowrey started off the show in mellow style. Mellow, yet intense. Dressed just in black, with a scruffy beard he is more folk than country. His rootsy style was very engaging and perfect as an opening. His candid and direct lyrics mirror those of Zac Brown's songs. He was joined on stage by members of the Zac Brown Band and later my Zac himself, as they sang a song they wrote together. "I don't need a roof above my head. I'd sleep in the dirt if you hold my hand."

Raw and raucous, Sonia sings and plays with balls. With a style that would be welcome in Austin, TX or Athens, GA as much as Nashville, I have to thank Zac Brown for exposing me to this artist. Her torn jeans, swagger, and spiky hair defy the country prototype (fitting in perfectly with the rest of the tour). She was introduced by Brown as "the lady that keeps them all in line", but I can imagine her as the first one in line to buy shots of whiskey.

Nic, who reminded me most of Citizen Cope, added a little funk to the opening trifecta. Like the others, he falls outside the country music archetype. His "Money Don't Make You Happy", with its clever lyrics and syncopation is reminiscent of G Love & Special Sauce. His opening song was a wicked cover of Europe's "Mind In The Gutter" and was much better than the original.



Like the other two acts, Nic was accompanied by various artists from the Zac Brown Band.


Zac Brown Band:
As much Allman Brothers as Oak Ridge Boys, ZBB is a far cry from traditional country. Or are they more in tune with traditional country than any of today's acts? When all of the members and guests were lined up on stage we were treated to a hammond organ, two drummers, an additional percussionist, a cello, madolin, dobro, fiddle, stand up bass, electric guitar, bass guitar, and two acoustic guitars. Let me tell you, they sounded good. The stage announcer was dressed in a smart suit and reminded me of a revivalist preacher. The band featured nary a cowboy cap. In my opinion, they are much more authentic that the Kenny Chesneys and even Garth Brooks' of the world. They have been touring and playing together since 2005. I became a fan about 3 years ago when I heard "Free" on their myspace page. I have had a link to them on my site ever since. They were nominated in this years CMAs for Best New Artist. They didn't win, but left their mark on the show with a killer cover of "Devil Went Down To Georgia".







The music is always Southern, but not always country. From bar-room anthems like "Toes" & "Where The Boat Leaves From" to haunting ballads like "Free" and "Highway 20 Drive", the crowd sang along with all of them. Flashes were going nuts at the end of "Highway 20 Drive", a song about children of divorce, when Zac Brown's father came onto stage.


Show Highlights:
Junkyard,
a haunting tale about hatred and eventually forgiveness. Brown based this song on his memory of sitting in his room with his pocketknife plotting to kill his step-father. In the middle of the song, the band broke out into Pink Floyd's "Is There Anybody Out There?". I actually quite enjoy the tips of the hat they give to influential artists.

Devil Went Down To Georgia.
The fiddle player in the band is top notch, and so is Brown as a guitar player. Both solos ripped up the middle of the set.

Where The Boat Leaves From.
One of my favorite songs, enhanced by a "One Love" interlude that took me totally by surprise.

Free / Into The Mystic.
The song that made me a fan didn't disappoint live!I Shall Be Released. The full band plus guests came out for the last song, a cover of Bob Dylan & The Band. Standing ovation as each member was introduced.

My impression of the band was this: They were much more talented than I expected. In these days over overdubs and, particularly in country music, studio musicians it is easy to get disappointed at a live show. No such problem with ZBB. They could literally play unplugged in a parking lot and sound better than most bands. With that being said, click below to watch them playing in a parking lot!

What is Beaujolais Nouveau?


At one past midnight on the third Thursday of each November, from little villages and towns like Romanèche-Thorins, over a million cases of Beaujolais Nouveau begin their journey through a sleeping France to Paris for immediate shipment to all parts of the world. Banners proclaim the good news: Le Beaujolais Nouveau est arrivé! "The New Beaujolais has arrived!" One of the most frivolous and animated rituals in the wine world has begun.

2006 Beaujolais Nouveau LabelBy the time it is over, over 65 million bottles, nearly half of the region's total annual production, will be distributed and drunk around the world. It has become a worldwide race to be the first to serve to this new wine of the harvest. In doing so, it has been carried by motorcycle, balloon, truck, helicopter, Concorde jet, elephant, runners and rickshaws to get it to its final destination. It is amazing to realize that just weeks before this wine was a cluster of grapes in a growers vineyard. But by an expeditious harvest, a rapid fermentation, and a speedy bottling, all is ready at the midnight hour. By French law, Beaujolais Nouveau is to be released no earlier than the third Thursday of November.

Beaujolais Nouveau began as a local phenomenon in the local bars, cafes, and bistros of Beaujolais and Lyons. Each fall the new Beaujolais would arrive with much fanfare. In pitchers filled from the growers barrels, wine was drunk by an eager population. It was wine made fast to drink while the better Beaujolais was taking a more leisurely course.

Beaujolais Nouveau is as about as close to white wine as a red wine can get. Due to the way it is made -the must is pressed early after only three days- the phenolic compounds, in particular the astringent tannins, normally found in red wines, isn't there, leaving an easy to drink, fruity wine. This, coupled with the fact that it tastes best when chilled, makes for a festive wine to be gulped rather than sipped, enjoyed in high spirits rather than critiqued. As a side note, it makes a great transitional wine for anyone wanting to move from white to red wines.

Finally, the race from grape to glass may be silly, but half the fun is knowing that on the same night, in homes, restaurants,cafes, pubs, bars and bistros around the world, the same celebration is taking place.

Hey Antivirus Pro Get Off Of My Cloud (You should read this)

So I have a little malware in my laptop. No biggie, I am going through the removal process right now. It is call Antivirus Pro, and is classified as a "rouge antispyware". I enjoy rougeish behavior as much (probably more) as the next guy, but this little guy is a sly devil. Thought I would

When i opened my laptop this morning I started getting system tray alerts about viruses, spyware, etc. Since it came from the system tray, it looked very legit. Of course, I have been connected for a very long time and have seen all sorts of stuff float around. The irony is I was getting alerts from Antivirus Pro while my actual AV software was performing its morning scan. I have attached an article, so I won't go into details about the behaviors. Let me just say I can see how easily an average user can be duped into buying software to remove an infection that they don't really have. Nefarious, these guys are!

Use protection when you surf. You don't know where some of those sites have been. You know which ones I'm talking about. I recommend AVG Antivirus Software along with Spybot: Search & Destroy (though not as good as it used to be) and Ad-Aware.

Halloween Drink Recipes

Halloween Drink Suggestions, to be featured on Island Time Radio later tonight. Tune in to wbwc.com between 11:00 and 11:30 EST to listen!


Shooters:

Pumpkin Pie
1/3 oz Kahlua® coffee liqueur
1/3 oz irish cream
1/4 oz Goldschlager® cinnamon schnapps
Cinnamon

Shake all ingredients and strain into a large shot glass. Sprinkle cinnamon on top.

Flaming Pumpkin Pie
1/2 oz Kahlua® coffee liqueur
1/2 oz irish cream
1/4 oz Goldschlager® cinnamon schnapps
151 rum
cinnamon-sugar

Prepare as a regular pumpkin pie shooter, combining the first three ingredients in a shaker and straining into a shot glass. With cinnamon-sugar at the ready, top with 151 and light. As the rum is burning toss cinnamon-sugar in, creating fun fire effects.

*Please be very careful when dealing with flaming shots. They are intended for party hosts and bartenders only, not for you to show your friends when you are already hammered from a night of drinking.*

Bloody Brain
1 oz peach schnapps
1 oz irish cream
grenadine

This is a visual shot. Pour the peach schnapps into a shot glass. Slowly pour the irish cream over the schnapps. DO NOT LAYER. Allow the irish cream to sink into the schnapps. It will clump together quite nastily. Drop in a few drops of grenadine from a bar spoon.
Depending on the glass...it will look something like this



Cocktails:

Green Demon
Equal parts:
vodka
rum
Midori® melon liqueur
lemonade

Combine all ingredients in a highball glass. Stir and garnish with a cherry.

Devil's Advocate
1 1/2 oz Bacardi® Limon (or substitute lemon flavored vodka)
3/4 oz triple sec
splash of sour mix
dash of grenadine
cranberry juice

Combine all ingredients over ice, balancing with cranberry juice. Stir and serve.


Warm Apple Pie
1 oz Hot Damn® cinnamon schnapps
1 oz Apple Pucker® apple schnapps

Pour over ice in a rocks glass and stir. Enjoy!

Purple Devil
1 oz amaretto
1 oz triple sec
cranberry juice
sprite®

Combine all ingredients over ice, topping with a splash of Sprite® to make it bubbly.

Zombie
Note: The original recipe is very complex. Here is a cheater recipe that you can make in bulk.

1 oz light rum
1/2 oz amaretto (or creme de almond if you have it)
1/2 oz triple sec
equal parts orange juice & sour mix
1/2 oz 151 proof rum

Combine all but the 151 in a tall glass and stir. Top with the 151 and garnish with a cherry.

Vampire
1 oz vodka
1 oz Chambord® raspberry liqueur
1 oz cranberry juice

Shake ingredients with ice and strain into a cocktail glass. Hang a set of vampire teeth on the rim of the glass

Voodoo Koolaid©

"My favorite of all of my Pango originals, this was actually an accident. My original idea was a blud drink to be called Blue Heaven. After I dropped some grenadine in my mistake, the Voodoo Koolaid was born."

3/4 oz Pango® rum
3/4 oz peach schnapps
1/2 oz blue curacao
1 tsp grenadine
lemon-lime soda

In a pint glass, combine all ingredients. I prefer to top with a little club soda to cut the sweetness of the lemon-lime soda. Stir to turn the drink a groovy purple color. Garnish with an orange wedge or a chunk of pineapple.

Harvest Moon
2 oz Tequila
1 oz Triple sec
Orange juice
Pineapple juice
2 tsp Grenadine

Pour all but grenadine into an ice-filled Collins glass (or pint glass), using equal parts of both juices. Slowly stir in the grenadine. Enjoy!


Punch:

Sparkling Harvest Punch

2 cups chilled cranberry juice
2 cups chilled apple juice
1 1/2 cup chilled orange juice
2 cups chilled club soda
Orange slices
Frozen cranberries

Mix together everything in a punch bowl.
Add a bottle of vodka for an alcoholic punch.

It said something witty and then told the person that found it to contact you, so David was calling me trying to find you. Your spirit lives in Juvie!!

Drink Recipe: Pink Iguana


Another pink drink for Breast Cancer Awareness Month

Pink Iguana
1 oz vodka
1 oz coconut rum
1/4 oz lime juice
1 oz cranberry juice

Combine ingredients with ice in a cocktail shaker. Shake and strain into a chilled cocktail glass. Garnish with a thin disk of lime floating on top.

Wow! I didn't realize the negative feedback an article about a local guy happy in what he does and those he serves would generate. Thank you to everyone who has given me waves, handshakes, congrats, high fives, etc in response to yesterdays Daytona News Journal piece. While many items like the Rum Runner and Planter's Punch have been Cruise shipped and Applebee'd into miserable phantoms of their previous selves, bartenders like Tiki not only continue to make them right, know their history...but have the skills to create all new concoctions..often on the fly. This one is special to me because I had forgotten all about giving this customer her new puppy care package. It's obvious she didn't!
"I've met Mark a few times. I first ran into him first online, on Meet The Phlockers and now my husband and I will try to stop in and see him everytime we are coming through Flager. When I adopted my dog he made me a large goodie bag for him and some of the toys are still my dog's favorites. He is a good soul and anyone who knows him as a friend or as a bartender is blessed."


All of the comments warmed me up on the inside and made the "not so fun" days, the "sweating all over myself and others" days, the "three deep at the bar and server tickets flowing onto the floor" days, and the "staying late to scrub the bar floor" days worth it. Plus, my friends at the Wickline Center (where I call bingo) couldn't wait to stick their copy on the bulletin board!

I've said it once and I will say it again. Without great customers I would just be a guy pouring drinks and talking to myself.
