It's a fact. I love pineapple. Chunked pineapple, sliced pineapple, or pineapple juice are all delicious to me. My most famous drink, the Tiki Kooler (http://www.tikikooler.com) is pineapple based. I drink pineapple juice every day. I prefer it over orange juice.
A couple of days ago I bought a juicy looking pineapple from Publix (it really is a pleasure shopping there, at least at the new one near me). I just got around to chopping it up today and was wondering exactly what to do with it, other than the obvious choice of standing over the sink eating until I had pineapple juice all over my hands, goatee, and chest (c'mon you didn't expect me to eat pineapple while wearing a shirt did you?). I decided on a chicken recipe I kinda made up right there (recipe to follow).
Then I found myself with half the pineapple left over. I looked over at the 8 different bottles of rum on my bar. No creme of coconut so a true Pina Colada was out. No lime juice, so I couldn't really make a proper Daiquiri. So I improvised with what I had and Tiki's Pineapple Delight was born.
Tiki's Pineapple Delight
3 oz white rum
2 oz margarita mix
2 cups loosely packed chunk pineapple (be told I just scooped a double handful out of the bowl)
2 cups of ice (or as much as it takes to make it nice and thick)
Throw everything in a blender and blend until smooth. Pour into a large glass (I used a 20 oz pilsner), grab the nearest Mad Gringo tropical shirt, and pretend it's not a rainy Florida Sunday (preferably on the Tiki Deck).
